Beef or Turkey Minestrone Soup


1/2 cup ACADEMIE Blend #3 wine

1-1/2 Lbs Lean ground beef or turkey

1 Lg onion, chopped

1 28 oz can plus one 14.5 oz can petite diced tomatoes

8 to 10 cups water

6 Beef bouillon cubes

2 Tsp dried Basil

2 Tsp dried oregano

1 Tsp garlic salt

3/4 Tsp salt

1 Large bag frozen mixed vegetables

1 Can Kidney beans, drained

2 Small Zucchini, sliced 1/4 inch thick

1 Cup elbow macaroni

1 package fresh spinach leaves

Crumble and cook beef or turkey in a large soup pot or Dutch oven until brown. Add onion and cook until onion is softened. Drain any fat. Add tomatoes, salt, water, bouillon cubes, Basil, Oregano, and Garlic salt. Bring mixture to a boil, reduce heat and cook 10 minutes. Add frozen vegetables and kidney beans and cook 5 minutes. Add zucchini slices and cook 5 minutes. Add macaroni and spinach leaves and cook 5 minutes or until vegetables are tender and pasta is al dente. Stir in wine and serve in bowls. Top with parmesan.
