Poached Pear and Spectacular Spiced Tea


2 pears (we suggest Taylor)

3 organic cinnamon sticks

1 tbsp organic cloves

1 pod star anise

1 tbsp allspice

1 bottle ACADÉMIE blend #4

1 cup organic sugar

Add ACADÉMIE, cinnamon, cloves, allspice and star
anise to a pot and bring to a light simmer for 10 minutes to boil off the alcohol. Meanwhile, rinse, quarter, and core pears. Slowly stir sugar into spice/wine mixture and until dissolved completely. Add pears and simmer until pears are translucent around the edges (20-30 minutes). If the wine doesn’t completely cover the pears, you can top up the pot with water or more wine.
After serving pears, pour the spiced liquid through a
colander into your favorite tea mug. Enjoy one of the best spiced teas you’ll ever have!
