Fresh Fig & Red Wine Preserves

Got bread? This fresh fig preserve tastes great slathered on your morning toast and works equally well offered in a small pot alongside a cheese plate and crackers at your next cocktail party. Yum!

Ingredients:

3 pounds fresh figs, chopped (I used Black Mission)

1 1/2 cups sugar

1 cup ACADÉMIE Blend #3

1 Tbsp anise seeds

1 cup chopped walnuts

Zest and juice from one lemon and one orange

Directions:

Combine all ingredients into a heavy stainless steel pot and simmer on low heat for approximately two hours, or until the preserves have reached the consistency you prefer. Let cool, then store in small jars. Will keep in the fridge for up to 3 weeks, longer if you freeze it. (Note: For smoother preserves, run through a food processor)
