Pepper & Pepper Tri-tip Marinade

Pepper and spice and everything nice (like ginger, tomatoes, garlic and red wine) - this marinade also serves as a reduction sauce once can liberally apply to your ready-to-serve tri-tip steak!


1/2 cup ACADEMIE Wine Blend #1

1-2 Tri-tip steaks

1/4 tbsp coarse-ground black pepper

1/2 tbsp crushed red pepper

1 tbsp olive oil

1/4 tbsp tomato paste

1/2 tbsp sweet basil

1/4 tbsp minced garlic

Mix all ingredients together thoroughly in a bowl. Poke holes into steaks with a fork to allow marinade to penetrate the steak surface. Add mixture into a large ziplock bag with steaks and allow to marinate in the fridge for 2-24 hours. The wine will tenderize the steaks while marinating.

When you are ready to cook your steaks, get 'em on the grill and pour the marinade into a skillet or pot. Boil thoroughly until reduced by about 1/2 or 1/3 (make sure you *do not* consume this marinade unless it has been thoroughly boiled as it has been in contact with raw meat while marinating!). Meanwhile start grilling your steaks.

When both are ready, spoon your reduced (and thoroughly boiled) marinade sauce over your freshly grilled steaks (to taste) and enjoy!
